Before we talk food I just have to say…the sun is shining and no rain today (well so they say) !!!    Now back to food…this is a little meal that is so easy to throw together and still quite tasty.  The chops just get thrown in the oven with a “special sauce” and the potato cakes are made from leftover mashed potatoes!

For the special chops I simply line a baking pan with foil (makes clean up easier) and lay the chops on the pan.  Layer each chop with some ketchup, then brown sugar, and finally a slice of onion.  Cover with foil, bake @ 350 degrees for 30 minutes (depending on thickness) remove foil top and bake 10 minutes longer.

For the potato cakes:  take your leftover mashed potatoes (mine were the garlic copycats I make like cheesecake factory) and add a bit of flour to thicken and hold them together.  Pat them out into patties with your hands.

 

Fry the potato patties in a little butter and vegetable oil.  Cook one side until crispy and brown before flipping so they hold together well.  Turn and fry until crispy and brown on the other side.  Remove to paper towel before placing on plate.  We eat them with ketchup.
