I love when the idea in your head and the taste you crave comes together in a bowl, in the pan and out of the oven like a charm.  I knew I wanted something carrot and although I adore carrot cake, cupcakes, muffins, snack cakes, bread and well everything carrot none of those were the thought tickling my senses.  I wanted something moist and  chewy and  that the kids could grab and take out to the pool.  This is what I came up with and I have to say that even the batter was so good I possibly could have sat down and eaten the whole bowl.

The Hubby said if I said wow one more time….lol.  He isn’t typically a sweet carrot eater, he likes them with salt and ranch.  He did taste the batter with a hmm I might be able to do that comment.  When they came out of the oven he had one and to my delight announced that he would be snacking on them for sure!

Carrot Coconut Pecan Bars
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup butter melted
  • 1 1/2 cups brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla
  • 2 eggs
  • 1 cup shredded carrots
  • 1/2 cup shredded coconut
  • 1/2 cup pecans chopped
  1. Melt butter and mix with sugars and vanilla. Add eggs and mix until blended.
  2. In bowl combine flour, baking powder, salt and cinnamon. Add to butter, egg and vanilla and mix until blended.
  3. Add carrots, coconut and pecans and mix until blended.
  4. Spread in greased jelly roll pan (15.25 x 10.25) and bake at 350 degrees for 25 minutes or until done and lightly browned.
  5. Cut into bars.


Mission accomplished…my sweet tooth is satisified, The Hubby likes them…bonus and the littles ones coming to swim have a treat for pool time!

    Wow, these look so good. I love the flavor combination. Don’t you just love it when the hubby approves something you’ve cooked/baked. If my hubby likes it, that’s saying a lot.

    Here is the flank steak marinade: 1/2 cup soy, 1/4 cup balsamic, 2 T Worcestershire, 1/4 cup canola oil, 2 cloves crushed garlic, and freshly ground black pepper. Marinate overnight and grill 🙂

    • It was very difficult not to grab one everytime I walked past them yesterday. The family seemed to love them as well, even the little ones! Thanks for the recipe, the combo is everything my family loves and The Hubby wants to try it on pork.
